Dropping or killing it releases pheromones that aggro nearby creatures for 60 seconds.

How do you use the Ammonite's ability in ARK?

You cannot mount or control an Ammonite. Exploit its pheromone release by deliberately provoking it near a creature you want to lure or agitate. Kill it to harvest its resources. Kill Ammonites for their drops rather than attempting to use them as allies.
